A good eggplant should be dark and firm. A soft skin means it’s been picked too long so don’t choose eggplants that are too soft and light in color because when they get old, they become a little bitter. A freshly picked eggplant should taste creamy, smooth and fragrant. Leave it whole and store it in the refrigerator.
